AGE - CUISINE MATCH
With other meats in Australia animals are grown to various ages, there are various breeds and different parts of the animal are used for different purposes. Some cuts of beef are used as steaks and some parts are better suited to slow cooking. Some breeds of sheep, cattle and pigs are better suited to different climates When it comes to chicken in Australia there is usally one type, the commerical broiler grown to the same age 4-6 weeks with some small producers growing their birds to 8 weeks. A bird bred to grow very quickly with large breasts.
The Joyce's Gold birds develop all parts of their body at the same rate, are specifically bred for free range and are grown out to a minimum of
14 weeks. These birds are still very tender and can be cooked the same way as regular meat chickens. Being grown out longer however creates a lot more flavour. We also grow some pullets (females) out to
20 weeks, and these are fantastic for slow roasting. The meat has a fine texture and darker leg meat through age and exercise and to keep them tender they are great when brined, cooked in an oven bag or other slow roasting methods. We also cater for food lovers by growing some cockerels ( males) out to
26 weeks. These are a
slow cookers dream and are perfect for casseroles, curries and slow cooker recipes.
